Easy One-Pan Lemon Herb Chicken Breast Recipe with Roasted Asparagus

A quick and easy one-pan meal featuring tender lemon herb chicken breasts roasted alongside crisp-tender asparagus, perfect for busy weeknights.

  • 2 boneless, skinless chicken breasts (around 6 oz / 170 g each), pounded slightly for even cooking
  • 1 fresh lemon, zested and juiced
  • 2 tablespoons chopped fresh parsley (or 1 teaspoon dried parsley)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 2 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 bunch asparagus (about 1 lb / 450 g), trimmed and tough ends snapped off
  • Salt and pepper to taste (preferably coarse kosher salt)
  • Optional: 1 teaspoon smoked paprika or chili flakes

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken breasts dry and pound gently to an even thickness of about ¾ inch (2 cm).
  3. In a small bowl, mix lemon zest, lemon juice, minced garlic, chopped parsley, thyme, olive oil, salt, pepper, and optional smoked paprika or chili flakes.
  4. Rub the marinade all over the chicken breasts and let sit for 10-15 minutes if time allows.
  5. Heat a tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear chicken breasts for 3-4 minutes per side until golden brown but not fully cooked.
  6. Toss the trimmed asparagus in the remaining marinade and arrange around the chicken in the skillet. Drizzle any leftover marinade over everything.
  7. Transfer the skillet to the oven and roast for 10-12 minutes until chicken reaches an internal temperature of 165°F (74°C) and asparagus is tender but crisp.
  8. Remove from oven and let chicken rest for 5 minutes before slicing. Spoon pan juices over the top before serving.

Use a meat thermometer to ensure chicken reaches 165°F (74°C). Let chicken rest after cooking to keep it juicy. Adjust roasting time for thicker asparagus stalks. Avoid overcrowding the pan for best sear. Frozen asparagus can be used but pat dry and add later in roasting to avoid sogginess.
