  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice (cinnamon, nutmeg, ginger, cloves)
  • 1 cup (200g) granulated sugar (can swap half for brown sugar)
  • 1 cup (240ml) canned pumpkin puree (not pumpkin pie filling)
  • ½ cup (120ml) vegetable oil or melted coconut oil
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 8 ounces (225g) cream cheese, softened
  • ¼ cup (50g) granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, or line with parchment paper.
  2. Make the cream cheese filling: Beat together cream cheese, ¼ cup sugar, egg yolk, and 1 teaspoon vanilla extract until smooth and creamy. Chill in fridge.
  3. In a large bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  4. Add sugar, pumpkin puree, oil, eggs, and vanilla extract to dry ingredients. Fold gently with a spatula until just combined; do not overmix.
  5. Pour half the batter into the loaf pan and smooth out. Spoon cream cheese filling over batter, leaving ½ inch from edges. Dollop remaining batter on top and spread carefully.
  6. Bake for 55-65 minutes. Check doneness by inserting a toothpick into the pumpkin bread layer (avoid cream cheese swirl); it should come out mostly clean with a few moist crumbs.
  7. Cool bread in pan for 15 minutes, then transfer to wire rack to cool completely.

Notes

Do not overmix the batter to keep the bread tender. Use room temperature eggs and cream cheese for smooth filling. Use canned pumpkin puree, not pumpkin pie filling. Tent with foil if top browns too quickly. Drain watery pumpkin puree to avoid soggy bread. Chill cream cheese filling before layering to prevent leaking.
