Ingredients

  • Fresh corn on the cob (small to medium ears preferred)
  • Water (for boiling and ice bath)
  • Ice (for ice bath)
  • Freezer bags or airtight containers
  • Optional: Butter (for coating before freezing)
  • Optional: Salt (for lightly salted blanching water)

Instructions

  1. Prepare the corn by husking and removing all silk threads. Rinse under cold running water and trim ends if needed.
  2. Fill a large pot with 4-5 quarts of water and bring to a rolling boil. Add a pinch of salt if desired.
  3. Prepare an ice bath by filling a large bowl with ice and cold water.
  4. Using tongs, lower the ears of corn into the boiling water. Blanch for 4 minutes for small to medium ears, or 5 minutes for larger ears.
  5. Immediately transfer the corn to the ice bath and let sit for the same amount of time as blanching (4-5 minutes).
  6. Remove corn from the ice bath and pat dry thoroughly with clean towels.
  7. Wrap each ear tightly in plastic wrap or foil (optional), then place in heavy-duty freezer bags. Remove as much air as possible and label with the date.
  8. Lay bags flat in the freezer initially, then stand upright once frozen. Use within 12 months for best quality.

Timing is critical for blanching: 4 minutes for small to medium ears, 5 minutes for larger ears. Always use an ice bath immediately after blanching to stop cooking and preserve texture. Dry corn thoroughly before freezing to prevent ice crystals and freezer burn. Label bags with date. Frozen corn is best used within 12 months.
