  • 1/2 teaspoon ground cinnamon

  • Optional: 1/4 teaspoon ground ginger

Instructions

  1. Prepare the peaches by blanching them in boiling water for 30 seconds, then plunge into ice water to loosen skins. Peel, pit, and chop into 1-inch pieces.
  2. Place peaches, sugar, lemon juice, cinnamon, and salt in a medium heavy-bottomed saucepan over medium heat. Stir occasionally until sugar dissolves and mixture reaches a gentle boil.
  3. Reduce heat to low and simmer uncovered, stirring every 5 minutes, until peaches soften and mixture thickens (30-40 minutes).
  4. Remove from heat and puree the mixture with an immersion blender until smooth. If using a regular blender, cool slightly before blending in batches.
  5. Taste and adjust sweetness or cinnamon if desired.
  6. Let the peach butter cool to room temperature, then spoon into clean glass jars or airtight containers.
  7. Store in the refrigerator for up to two weeks or freeze for up to three months.

Notes

For chunkier texture, pulse the blender less or mash by hand. If peach butter is too runny, simmer longer while stirring frequently. Use fresh lemon juice to brighten flavor and balance sweetness. Vanilla extract and ground ginger are optional for added depth and spice. Frozen peaches can be used if thawed and drained well.
