  • 1 pint (300 grams) cherry tomatoes
  • 8 ounces (225 grams) fresh mozzarella balls (bocconcini)
  • About 20 fresh basil leaves
  • ½ cup (120 ml) balsamic vinegar
  • 1 tablespoon honey
  • 2 tablespoons extra virgin olive oil
  • Salt to taste
  • Freshly cracked black pepper to taste
  • 68 inch (1520 cm) wooden or bamboo skewers

Instructions

  1. Make the balsamic glaze: In a small saucepan, combine ½ cup (120 ml) balsamic vinegar and 1 tablespoon honey. Bring to a gentle boil over medium heat, then reduce heat to low and simmer for 10-15 minutes, stirring occasionally, until thick enough to coat the back of a spoon. Let cool completely.
  2. Prepare the ingredients: Rinse cherry tomatoes and basil leaves under cold water and pat dry thoroughly. Drain mozzarella balls well; cut in half if large.
  3. Assemble the skewers: Thread one cherry tomato, one basil leaf (folded if large), and one mozzarella ball onto each skewer. Repeat until all ingredients are used, aiming for 3-4 bites per skewer.
  4. Season and drizzle: Arrange skewers on a serving platter. Drizzle 2 tablespoons extra virgin olive oil evenly over them, then sprinkle salt and freshly cracked black pepper to taste. Finally, drizzle the cooled balsamic glaze over everything.
  5. Serve immediately or chill: Best served fresh but can be refrigerated up to 2 hours before serving. If chilling, add glaze just before serving.

Notes

Soak skewers in water for 10 minutes before threading if grilling to prevent burning. Drizzle balsamic glaze just before serving to keep basil fresh and mozzarella from becoming soggy. Use fresh, dry ingredients for best flavor. Can substitute grape tomatoes or burrata cheese. For dairy-free, use marinated tofu or firm avocado cubes.
