  • 1 lemon (zest and juice)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh herbs (parsley, dill, thyme), finely chopped
  • 3 tablespoons extra virgin olive oil, divided
  • Salt and flaky sea salt, to taste
  • Black pepper, to taste
  • 4 cups broccoli florets (about 10.5 ounces)
  • Optional: red pepper flakes, parmesan cheese for broccoli

Instructions

  1. Preheat the oven to 425°F (220°C) and allow it to heat for at least 15 minutes.
  2. Pat the salmon fillets dry with paper towels to ensure crispy skin.
  3. In a small bowl, mix 2 tablespoons olive oil, lemon zest and juice, minced garlic, chopped fresh herbs, salt, and black pepper.
  4. Rub the lemon herb mixture generously over both sides of each salmon fillet, especially the skin side. Set aside.
  5. Toss broccoli florets with 1 tablespoon olive oil, salt, pepper, and optional red pepper flakes.
  6. Arrange the salmon fillets skin-side down on a rimmed baking sheet lined with parchment paper or a silicone mat. Spread the broccoli evenly around the salmon, leaving space for roasting.
  7. Bake in the preheated oven for 12-15 minutes until the salmon flakes easily with a fork and the skin is crispy, and broccoli is tender with slightly charred edges.
  8. Optional: Sprinkle fresh herbs and an extra squeeze of lemon over the salmon and broccoli before serving.
