  • 1 cup kiwi, peeled and sliced

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9- or 10-inch round pizza pan or tart pan.
  2. In a large bowl, beat 1 cup softened butter and 1 cup granulated sugar until creamy and smooth, about 2 to 3 minutes with an electric mixer.
  3. Add 1 large egg and 1 teaspoon vanilla extract to the butter mixture and mix until fully combined.
  4. In a separate bowl, whisk together 2 ½ cups all-purpose flour, ½ teaspoon baking powder, and ¼ teaspoon salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing on low until just combined. The dough will be soft but not sticky.
  6. Transfer the dough to the prepared pan and press evenly to about ¼ inch thickness. Chill for 10 minutes if dough is too soft.
  7. Bake the crust for 15-18 minutes until edges are golden and center is set but still soft. Cool completely on a wire rack.
  8. Beat 8 oz softened cream cheese until smooth. In another bowl, whip ½ cup heavy cream until soft peaks form.
  9. Gradually add ½ cup powdered sugar and 1 teaspoon vanilla extract to the cream cheese, then gently fold in the whipped cream until fluffy.
  10. Spread the creamy topping evenly over the cooled crust.
  11. Arrange fresh fruit on top as desired. Garnish with mint leaves if using.
  12. Chill the assembled fruit pizza in the refrigerator for at least 30 minutes before serving.

Pressing the dough evenly into the pan ensures a soft but sturdy crust. Chill the dough if too soft to handle. Cool the crust completely before adding the creamy topping to prevent melting.
