A simple, creamy, and spicy buffalo chicken dip made effortlessly in a slow cooker, perfect for game day parties and casual get-togethers.

Ingredients

Scale
  • 3 cups shredded cooked chicken (rotisserie chicken recommended)
  • 8 oz cream cheese, softened
  • 1 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/4 cup blue cheese crumbles (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Shred about 3 cups (450g) of cooked chicken.
  2. Soften 8 oz (225g) of cream cheese by microwaving in 20-second bursts or leaving it out for about 30 minutes.
  3. In a mixing bowl, combine softened cream cheese, shredded chicken, 1 cup (240ml) buffalo wing sauce, 1/2 cup (120ml) ranch dressing, 1 cup (100g) shredded cheddar cheese, 1/4 cup (30g) blue cheese crumbles (if using), 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and a pinch of salt and pepper. Stir well until evenly mixed.
  4. Pour the mixture into a lightly greased slow cooker insert and spread evenly.
  5. Cover and cook on low for 2 to 3 hours, stirring once halfway through.
  6. After cooking, check the dip for warmth, bubbliness, and creaminess. Adjust seasoning with more buffalo sauce or salt if needed.
  7. Switch the slow cooker to the warm setting and keep the dip warm for serving.

Notes

Softening cream cheese before mixing is crucial to avoid lumps. Stir halfway through cooking to prevent sticking and ensure even heat distribution. For a thicker dip, add extra shredded cheddar cheese on top during the last 15 minutes of cooking. Can be made ahead and refrigerated overnight before slow cooking. Can be baked in the oven at 350°F for 20-25 minutes as an alternative method.
