  • 8 oz cream cheese, softened (225g)
  • 1/2 cup buffalo hot sauce (120ml)
  • 1/2 cup ranch dressing (120ml)
  • 1 cup shredded cheddar cheese (115g)
  • 1/2 cup shredded mozzarella cheese (55g)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • Optional toppings: chopped green onions, crumbled blue cheese

Instructions

  1. Prepare the chicken by shredding rotisserie or pre-cooked chicken into bite-sized pieces, about 3 cups (450g). Set aside.
  2. Soften the cream cheese by letting it sit at room temperature for about 15 minutes or microwaving for 20 seconds.
  3. In a medium bowl, combine softened cream cheese, ranch dressing, buffalo hot sauce, garlic powder, onion powder, salt, and black pepper. Stir until smooth and creamy.
  4. Add the shredded chicken and creamy mixture to the slow cooker. Stir well to coat all the chicken evenly.
  5. Cover and cook on low for 2 to 2.5 hours, stirring once halfway through.
  6. Stir in shredded cheddar and mozzarella cheeses. Mix gently until melted and creamy, about 5-10 minutes more on low with lid off.
  7. Taste and adjust seasoning with salt, pepper, or hot sauce if desired. Add optional toppings like chopped green onions or blue cheese.
  8. Serve warm from the slow cooker or transfer to a serving dish. Offer with tortilla chips, celery sticks, or sliced baguette.

Notes

If the dip is too thick after cooking, stir in a splash of milk or extra ranch dressing to loosen. Use shredded chicken for better texture. Stir halfway through cooking to prevent sticking. Softening cream cheese is essential for smooth texture. Can be made in the oven at 350°F for 25-30 minutes as an alternative.
