  • 1 teaspoon lime zest
  • 1/2 teaspoon vanilla extract
  • Whipped cream or sour cream for topping (optional)

Instructions

  1. Prepare the crust: Crush graham crackers into fine crumbs using a food processor or rolling pin in a sealed plastic bag. Mix crumbs with melted butter and sugar until evenly moistened. Press firmly into the bottom of an 8×8-inch pan to form an even layer. Chill in the fridge.
  2. Make the filling: Beat softened cream cheese until smooth and fluffy. Gradually add sweetened condensed milk and mix until combined. Stir in key lime juice, lime zest, and vanilla extract until mixture thickens slightly but remains pourable.
  3. Assemble the bars: Pour the filling over the chilled crust and smooth the top with a spatula. Cover with plastic wrap.
  4. Chill and set: Refrigerate for at least 3 hours or overnight until firm.
  5. Serve: Cut into squares using a knife dipped in hot water for clean edges. Optionally top with whipped cream or extra lime zest.
