A quick and easy frittata combining shredded zucchini, sweet corn, and a blend of cheeses for a light yet satisfying breakfast or brunch.

  • 6 large eggs, room temperature
  • 1 ½ cups shredded zucchini, finely shredded and squeezed dry
  • 1 cup corn kernels, fresh or frozen (thawed)
  • 1 cup shredded cheese (half sharp cheddar, half mozzarella or Monterey Jack)
  • ½ small onion, finely chopped
  • 1 clove garlic, minced
  • 2 tablespoons olive oil or unsalted butter
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: pinch of dried thyme or oregano

Instructions

  1. Wash and dry 1 medium zucchini. Shred finely using a box grater or food processor. Place shredded zucchini in a clean kitchen towel or cheesecloth and squeeze firmly to remove moisture.
  2. If using frozen corn, thaw and drain well. Finely chop half a small onion and mince one garlic clove.
  3. In a large mixing bowl, crack 6 large eggs and beat until smooth and slightly frothy. Add a pinch of salt and pepper.
  4. Add shredded zucchini, corn kernels, chopped onion, minced garlic, and 1 cup shredded cheese to the eggs. Stir gently to combine without overmixing.
  5. Heat 2 tablespoons olive oil or butter in a 10-inch cast iron or non-stick skillet over medium heat. Pour in the egg mixture and spread evenly. Cook without stirring for about 5 minutes until edges start to set and bottom is golden.
  6. Reduce heat to low and cover skillet with a lid or foil. Cook for another 8-10 minutes until the top is mostly set but slightly jiggly in the center.
  7. Optional: Transfer skillet to a preheated broiler for 2-3 minutes to get a bubbly, golden cheese crust, watching carefully to prevent burning.
  8. Remove from heat and let the frittata rest for 5 minutes. Slice into wedges and serve warm.

Notes

Squeezing out zucchini moisture is essential to prevent sogginess. Use room temperature eggs for fluffier texture. Cook low and slow to avoid rubbery eggs. Watch broiler carefully if using to brown the top. Cast iron skillet preferred for crispy edges but non-stick works fine.
