Instructions

  1. Gather your ingredients and prep add-ins. Shred the cheese, chop any veggies, and have your optional proteins ready (about 5 minutes).
  2. Heat the skillet over medium heat. Add a small pat of butter or a teaspoon of oil and let it melt evenly.
  3. Lay one tortilla flat on a plate. Sprinkle a generous ¾ cup (about 3 ounces) of shredded cheese evenly over half of the tortilla. Add a spoonful of shredded chicken or turkey if using. Spoon a teaspoon of mild salsa over the filling, then sprinkle with salt and pepper lightly. Fold the tortilla in half, pressing gently.
  4. Transfer the quesadilla carefully to the hot skillet. Cook for 2-3 minutes until the bottom is golden brown and crispy. Use a spatula to peek and ensure it’s not burning.
  5. Carefully flip the quesadilla over and cook another 2-3 minutes until the cheese is melted and the tortilla is crisp.
  6. Remove from the skillet and place on a plate lined with a paper towel. Let it rest for 1-2 minutes to allow the cheese to set slightly.
  7. Cut into 3-4 wedges using a sharp knife or pizza cutter.
