  • 34 ripe bananas, mashed (about 1 1/2 cups/340g)
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/3 cup (80ml) salted caramel sauce, homemade or store-bought

Instructions

  1. In a medium saucepan over medium heat, melt 1/2 cup (115g) unsalted butter. Stir frequently as it foams and then turns golden brown with a nutty aroma, about 4-6 minutes. Remove from heat immediately and pour into a mixing bowl to cool slightly.
  2. To the browned butter, add 3/4 cup (150g) granulated sugar and stir until combined. Beat in 2 large eggs, one at a time, then stir in 1 teaspoon vanilla extract and the mashed bananas (1 1/2 cups/340g).
  3. In a separate bowl, whisk together 1 3/4 cups (220g) all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently but thoroughly until just combined. Avoid over-mixing.
  5. Grease a 9×5-inch loaf pan with butter or non-stick spray. Pour half the batter into the pan, smoothing it out with a spatula.
  6. Spoon about half of the salted caramel sauce (1/6 cup or 40ml) over the batter. Use a knife or skewer to swirl it gently into the batter, creating a marbled effect.
  7. Pour the rest of the batter on top, then dollop the remaining caramel sauce (1/6 cup or 40ml) and swirl again carefully.
  8. Bake in a preheated oven at 350°F (175°C) for 55-65 minutes. Check doneness by inserting a toothpick in the center; it should come out with a few moist crumbs but no wet batter. Tent with foil if the top browns too quickly.
  9. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas with dark spots for best sweetness and moisture. Stir butter constantly when browning to avoid burning. Warm caramel sauce slightly before swirling for easier mixing. Tent with foil if bread browns too quickly. Avoid over-mixing batter to keep bread tender.
