Crispy Smash Burgers Recipe with Zesty Pickled Jalapeños

A quick and easy recipe for crispy, juicy smash burgers topped with zesty pickled jalapeños that add a bright, tangy heat. Perfect for casual get-togethers and weeknight dinners.

  • 1 pound (450 g) ground beef (80/20 blend)
  • Kosher salt and cracked black pepper, to taste
  • 1 teaspoon vegetable oil or neutral oil
  • Soft hamburger buns (brioche or potato buns recommended)
  • American or cheddar cheese slices (optional)
  • ½ cup (120 ml) pickled jalapeños (store-bought or homemade)
  • Mayonnaise, for spreading
  • Yellow mustard, for spreading
  • Thinly sliced raw or caramelized onion
  • Optional toppings: lettuce, tomato slices, pickles

Instructions

  1. Prepare the pickled jalapeños if making fresh: Slice 3-4 jalapeños thinly. In a small bowl, combine ½ cup white vinegar, 1 tablespoon sugar, ½ teaspoon salt, and the sliced jalapeños. Let sit at least 20 minutes.
  2. Divide ground beef into 4 equal portions and gently roll each into a loose ball without overworking the meat.
  3. Preheat a cast iron skillet or griddle over medium-high heat until very hot (about 5 minutes). Add 1 teaspoon vegetable oil and spread evenly.
  4. Place a beef ball onto the hot skillet. Using a sturdy metal spatula, press down firmly to flatten the patty to about ¼ inch (6 mm) thickness. Hold pressure for 10 seconds to create a crispy crust. Repeat with remaining balls, leaving room in the pan.
  5. Immediately season each patty with kosher salt and cracked black pepper.
  6. Cook patties undisturbed for 2-3 minutes until edges darken and crisp.
  7. Flip each patty carefully. If using cheese, place a slice on top after flipping. Cook another 1-2 minutes until cheese melts and burger is cooked through.
  8. Toast buns face down in the skillet or separate pan until golden brown, about 1 minute.
  9. Assemble burgers by spreading mayonnaise and yellow mustard on buns, adding the patty, a generous spoonful of pickled jalapeños, onions, and optional lettuce.
  10. Serve immediately to enjoy the crispy edges at their best.

Notes

Do not press down on patties after flipping to avoid squeezing out juices. Smash patties only once for best crust. Use high heat for a crispy crust. Toast buns just before assembly to prevent sogginess. Leftover patties can be refrigerated for up to 2 days and reheated gently in a skillet.
