Crispy Smash Burger Recipe with Caramelized Onion Jam and Pickles

A quick and easy crispy smash burger with a perfect crust, juicy interior, topped with sweet and tangy caramelized onion jam and crunchy pickles. Ideal for casual gatherings or a satisfying solo meal.

  • 1 1/3 lb ground beef (80/20 blend, about 150g per patty for 4 patties)
  • Salt and freshly ground black pepper to taste
  • Vegetable oil for skillet
  • 2 medium yellow onions (about 300g), thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon packed brown sugar
  • 1 tablespoon balsamic vinegar
  • Pinch of salt
  • 4 soft hamburger buns (brioche or potato buns recommended)
  • Pickles (dill slices or bread-and-butter style)
  • Cheese slices (optional, sharp cheddar or American)
  • Mayonnaise or favorite burger sauce (optional)

Instructions

  1. Start the caramelized onion jam: Melt butter in a medium skillet over medium-low heat. Add sliced onions and a pinch of salt. Cook slowly, stirring occasionally for about 15 minutes.
  2. Sprinkle brown sugar over onions and stir to coat. Cook another 5 minutes until onions are golden and sticky.
  3. Stir in balsamic vinegar and cook for 2 more minutes. Set aside to thicken as it cools.
  4. Divide ground beef into 4 equal portions (about 150g each). Shape into loose balls without overworking. Season both sides with salt and pepper.
  5. Heat a cast iron or heavy skillet over medium-high heat. Add a teaspoon of vegetable oil and let it shimmer.
  6. Place one beef ball on the skillet and immediately press down firmly with a spatula or burger press until about 1/4 inch thick. Cook undisturbed for about 3 minutes until crispy edges form.
  7. Flip the patty carefully, add cheese slice if using, and cook for another 2-3 minutes. Repeat for remaining patties.
  8. Toast the buns cut-side down in the skillet or separate pan until golden and slightly crispy (about 2 minutes).
  9. Assemble the burger: Spread mayonnaise or burger sauce on the bottom bun, layer the patty, a generous spoonful of caramelized onion jam, and a few pickle slices. Top with the bun and press gently.

Notes

Do not press the patty after flipping to keep it juicy. Use a sturdy metal spatula for smashing. The caramelized onion jam can be made ahead and stored in the fridge for up to a week. For gluten-free or dairy-free options, use gluten-free buns or lettuce wraps and substitute butter with olive oil or dairy-free alternatives.
