A quick and easy fall-inspired sheet pan meal featuring crispy chicken thighs roasted with sweet-tart apples and caramelized Brussels sprouts. Perfect for a comforting weeknight dinner with minimal cleanup.

  • 4 to 6 bone-in, skin-on chicken thighs (about 2 lbs / 900 g)
  • 1 pound (450 g) Brussels sprouts, trimmed and halved
  • 2 medium apples, cored and sliced into wedges (recommended Granny Smith or Honeycrisp)
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 ½ teaspoons salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon apple cider vinegar (optional, for finishing)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Trim the stem ends off Brussels sprouts and halve them lengthwise. Keep any loose outer leaves.
  3. Core and slice apples into ½ inch thick wedges.
  4. Pat chicken thighs dry thoroughly with paper towels to ensure crispy skin.
  5. In a large mixing bowl, combine olive oil, garlic powder, smoked paprika, dried thyme, salt, and pepper.
  6. Add chicken thighs, Brussels sprouts, and apple wedges to the bowl and toss until everything is evenly coated with the seasoning mixture.
  7. Arrange chicken thighs skin-side up in a single layer on a large rimmed sheet pan, spacing them apart. Scatter Brussels sprouts and apple wedges around the chicken in a single layer.
  8. Roast in the oven for 25 minutes. Then flip the chicken thighs skin-side up again using tongs and continue roasting for another 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden and crispy.
  9. Remove from oven and drizzle apple cider vinegar over the chicken and veggies to brighten flavors.
  10. Let the dish rest for 5 minutes before serving to allow juices to redistribute.

Notes

Patting the chicken dry is crucial for crispy skin. Avoid overcrowding the pan to ensure even roasting and crispiness. If Brussels sprouts brown too quickly, tent the pan loosely with foil halfway through roasting. Use a meat thermometer to check for doneness. Let the chicken rest before serving. Apple cider vinegar drizzle is optional but recommended for brightness.
