A crispy, cheesy cornbread with a spicy southwestern twist, baked in a cast iron skillet to achieve a perfect crust and tender crumb.

  • 1 cup (120g) yellow cornmeal (medium grind)
  • 1 cup (125g) all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup (240ml) milk (whole or 2%)
  • 4 tablespoons (60g) unsalted butter, melted + extra for skillet
  • 1 cup (about 4 ounces/115g) sharp white cheddar cheese, shredded
  • 1/2 cup roasted green chiles, chopped (canned or fresh roasted)
  • Optional: pinch of cayenne or smoked paprika for extra warmth

Instructions

  1. Preheat the oven and cast iron skillet to 425°F (220°C).
  2. In a large bowl, whisk together cornmeal, flour, baking powder, sugar, and salt.
  3. In another bowl, beat eggs, then stir in milk and melted butter (not too hot).
  4. Pour wet ingredients into dry ingredients and stir gently until just combined; a few lumps are fine.
  5. Fold in shredded cheddar cheese and chopped roasted green chiles.
  6. Carefully remove hot skillet from oven, add a tablespoon of butter and swirl to coat bottom and sides.
  7. Pour batter into the sizzling buttered skillet and spread evenly.
  8. Bake for 20-25 minutes until top is golden and a toothpick inserted in center comes out clean.
  9. Let cornbread rest for about 10 minutes before slicing and serving.

Notes

Preheat the skillet to get a crispy crust. Use fresh shredded cheese for better melt. Avoid overmixing the batter to keep cornbread tender. If edges brown too fast, cover loosely with foil halfway through baking. For gluten-free, substitute flour with gluten-free baking blend. For dairy-free, use plant-based milk and non-dairy butter substitute.
