  • 12 tablespoons (15-30ml) honey
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon (2.5ml) vanilla extract
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine 1/2 cup rolled oats with 1 tablespoon chia seeds if using. Stir well to blend.
  2. Add 1/2 cup milk, 1/2 cup cottage cheese, and 1/2 teaspoon vanilla extract. Mix thoroughly to coat oats and slightly break up cottage cheese.
  3. Drizzle 1 to 2 tablespoons honey over the mixture and stir gently to distribute sweetness evenly. Add a pinch of salt.
  4. Fold in 1/2 cup fresh or frozen mixed berries.
  5. Scoop the mixture evenly into 2 small mason jars or airtight containers, leaving room for expansion.
  6. Seal jars tightly and refrigerate for at least 6 hours, preferably overnight.
  7. In the morning, gently stir the oats, add extra honey or fresh berries if desired, and serve chilled.

Notes

Leave some space in jars for mixture expansion to avoid spillover. Blend cottage cheese lightly for smoother texture if preferred. Stir once midway through refrigeration if desired. Use old-fashioned rolled oats for best texture. Chia seeds add thickness and fiber. Store leftovers up to 3 days in fridge; stir in milk before serving if thickened. Avoid freezing.
