  • 1 pound boneless, skinless chicken breasts, trimmed and sliced into strips
  • 2 tablespoons extra virgin olive oil
  • 2 cloves fresh garlic, minced
  • 1/4 cup chopped sun-dried tomatoes packed in oil
  • 2 cups fresh spinach, washed and roughly chopped
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning (blend of dried basil, oregano, and thyme)
  • Salt and pepper to taste
  • 8 ounces fettuccine pasta

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces of fettuccine and cook according to package directions (usually 10-12 minutes) until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the sliced chicken breasts with salt, pepper, and 1 teaspoon of Italian seasoning. Add chicken to the pan and cook 4-5 minutes per side until golden and cooked through. Remove chicken and set aside.
  3. In the same pan, reduce heat to medium and add minced garlic. Stir for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and stir to combine.
  4. Pour in 1 cup heavy cream and bring to a gentle simmer. Stir in 1/2 cup freshly grated Parmesan cheese until melted and the sauce thickens slightly, about 3-4 minutes.
  5. Add 2 cups fresh chopped spinach to the sauce and stir until wilted.
  6. Return the cooked chicken strips to the pan along with the drained pasta. Toss everything together, adding reserved pasta water a little at a time if the sauce needs loosening.
  7. Taste and adjust salt, pepper, or Italian seasoning as needed. Let everything warm through for 1-2 minutes before serving.

Notes

Do not overcook the chicken to keep it juicy. Use fresh garlic for best flavor. Simmer cream and cheese gently to avoid curdling. Reserve pasta water to adjust sauce consistency. Stir constantly when adding cheese for smooth texture.
