  • 1/4 cup (60g) Greek yogurt (full-fat or dairy-free alternative)
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup (about 75g) fresh strawberries, chopped
  • 1 teaspoon chia seeds (optional)
  • 1/4 teaspoon lemon zest (optional)

Instructions

  1. Soften the cream cheese by blending 2 tablespoons with 1/2 cup (120ml) milk in a mixing bowl using a whisk or fork until smooth and creamy.
  2. Stir in 1/4 cup (60g) Greek yogurt, 1 tablespoon honey or maple syrup, and 1/2 teaspoon vanilla extract until fully combined.
  3. Add 1/2 cup (45g) rolled oats and 1 teaspoon chia seeds if using; stir to coat the oats evenly.
  4. Fold in 1/2 cup (about 75g) chopped fresh strawberries and 1/4 teaspoon lemon zest if desired.
  5. Transfer the mixture to a glass jar or airtight container, seal tightly, and refrigerate overnight or for at least 6 hours.
  6. In the morning, stir gently and add a splash of milk if the mixture is too thick. Top with extra sliced strawberries or crushed graham crackers if desired before serving.

Notes

Softening the cream cheese is crucial to avoid lumps and achieve a smooth texture. Use whole milk for creaminess or plant-based milk for a lighter version. Let oats soak for at least 6 hours, ideally 8-10 hours, but not more than 12 hours to avoid mushiness. Add a drizzle of honey before serving for extra sweetness. Can be warmed gently but best served cold.
