A no-churn, creamy strawberry cheesecake ice cream bar recipe perfect for summer, combining a crumbly graham cracker crust with a luscious, tangy cheesecake filling swirled with fresh strawberries.

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs (about 10 full sheets)
  • ¼ cup unsalted butter, melted
  • 2 tablespoons granulated sugar (for crust)
  • 16 oz (450g) cream cheese, softened
  • 1 cup (240ml) heavy cream, cold
  • 1 can (14 oz/395g) sweetened condensed milk
  • 1 teaspoon pure vanilla extract
  • 2 cups (300g) fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar (for strawberries)

Instructions

  1. Prepare the crust: In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until evenly coated. Press firmly into the bottom of an 8×8-inch pan. Set aside or refrigerate.
  2. Macerate the strawberries: Toss sliced strawberries with 2 tablespoons sugar in a small bowl. Let sit for about 10 minutes to release juices.
  3. Beat the cream cheese: In a large bowl, beat softened cream cheese on medium speed until ultra-smooth and creamy.
  4. Add condensed milk and vanilla: Slowly pour in sweetened condensed milk and vanilla extract while beating until combined.
  5. Whip the heavy cream: In a separate chilled bowl, whip cold heavy cream on high speed until stiff peaks form.
  6. Fold whipped cream into cream cheese mixture gently to keep it light and airy.
  7. Fold in the macerated strawberries with their juices evenly but gently.
  8. Assemble the bars: Pour filling over crust and spread evenly. Cover tightly with plastic wrap or parchment paper.
  9. Freeze for at least 6 hours or overnight for best texture.
  10. Slice and serve: Run a sharp knife under hot water, dry quickly, and slice into bars.

Notes

Use softened cream cheese for smooth filling. Whip heavy cream to stiff peaks for light texture. Drain frozen strawberries well to avoid watery filling. Press crust firmly for a solid base. Run a hot knife under water before slicing bars for clean cuts. Freeze bars overnight for best texture.
