A balanced and comforting cold brew coffee with real pumpkin puree and a light vanilla foam topping, perfect for cozy fall mornings or afternoon breaks.

Ingredients

Scale
  • 1 cup (240 ml) cold brew coffee (medium roast concentrate recommended)
  • 2 tablespoons (about 30 grams) pumpkin puree (not pumpkin pie filling)
  • 1/2 cup (120 ml) milk or cream (whole milk or half-and-half recommended; dairy-free alternatives like oat milk for vegan)
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup (optional, adjust to taste; honey works too)
  • 1/4 teaspoon ground cinnamon
  • A pinch of ground nutmeg
  • 1/3 cup (80 ml) heavy cream (chilled, for whipping vanilla foam; coconut cream for dairy-free option)
  • 1 teaspoon sugar (optional, to sweeten vanilla foam)

Instructions

  1. Prepare the Pumpkin Mixture (5 minutes): In a bowl, combine the pumpkin puree, milk (or cream), maple syrup, vanilla extract, cinnamon, and nutmeg. Whisk together until smooth and well blended. The mixture should be creamy but pourable.
  2. Mix with Cold Brew (2 minutes): Pour 1 cup (240 ml) of cold brew coffee into your serving glass. Slowly add the pumpkin mixture and stir gently to combine. Taste and adjust sweetness if needed by adding a little more maple syrup.
  3. Make the Vanilla Foam (3-5 minutes): In a chilled bowl or jar, pour the heavy cream, add vanilla extract and sugar (if using). Using a handheld frother or electric mixer, whip until soft peaks form. The foam should be airy but still hold its shape.
  4. Assemble the Drink (1 minute): Spoon the vanilla foam generously over the top of your pumpkin cold brew. The foam should sit lightly on the surface, creating a beautiful layered effect.
  5. Garnish and Serve: Optionally, sprinkle a little cinnamon or nutmeg on top for a finishing touch. Serve immediately with a straw or spoon.

Notes

Keep cream and utensils chilled for best foam results. Whip cream to soft peaks to avoid overwhipping. Use pure pumpkin puree, not pumpkin pie filling, for authentic flavor. Stir pumpkin mixture gently into cold brew to maintain foam texture. Prepare pumpkin mix ahead for convenience. For vegan version, use oat or almond milk and coconut cream. Foam thins quickly if cream is not cold or overwhipped.
