A quick and comforting creamy chicken dish with a flavorful sun-dried tomato basil sauce that turns simple chicken breasts into a cozy, indulgent meal.

  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 grams)
  • Salt and black pepper, to taste (kosher salt preferred)
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (packed in oil, drained but reserve oil)
  • 1 cup chicken broth (240 ml), low sodium preferred
  • 1 cup heavy cream (240 ml) (can substitute half-and-half for lighter option)
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup fresh basil leaves, chopped
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels, then season both sides generously with salt and black pepper. (5 minutes)
  2. Heat olive oil and butter in a large skillet over medium-high heat until the butter foams. Add chicken breasts and cook for 5-6 minutes on one side without moving to develop a golden crust. Flip and cook another 4-5 minutes until chicken is cooked through (internal temp around 160°F/71°C). Remove chicken and set aside tented with foil. (10-12 minutes)
  3. Lower heat to medium; add minced garlic to the pan and sauté for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and stir for another minute. (2 minutes)
  4. Pour in chicken broth, scraping up brown bits from the pan. Let broth simmer and reduce slightly for 3-4 minutes. (4 minutes)
  5. Stir in heavy cream and grated Parmesan cheese, mixing until cheese melts and sauce thickens slightly, about 3-5 minutes. Add more broth or cream if sauce is too thick. (5 minutes)
  6. Stir in chopped fresh basil and red pepper flakes (if using). Taste and adjust seasoning with salt and pepper. (1 minute)
  7. Return chicken breasts to the pan, spoon sauce over them, and warm together for 2-3 minutes so flavors meld and chicken finishes cooking gently. (3 minutes)
  8. Serve chicken with plenty of creamy sun-dried tomato basil sauce spooned over the top. Garnish with extra basil leaves if desired.

Notes

Do not crowd the pan when searing chicken to ensure a good crust. Use a mix of butter and olive oil for flavor and higher smoke point. Use sun-dried tomatoes packed in oil for best flavor; soak dry-packed tomatoes in warm water for 10 minutes before use. Let chicken rest after searing to keep it juicy. Add fresh basil at the end to preserve flavor and color. If sauce separates, stir in a teaspoon of cold water or broth off heat to bring it back together.
