  • 23 tablespoons honey or maple syrup

  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Cut the pineapple in half lengthwise. Using a sharp knife or pineapple corer, carefully hollow out the fruit, leaving about a half-inch border to keep the shell sturdy. Reserve the pineapple flesh for blending or snacking. (10 minutes)
  2. Peel and chop ripe mangoes into chunks, about 3 cups total. (5 minutes)
  3. In a blender or food processor, combine mango chunks, coconut milk, honey or maple syrup, lime juice, vanilla extract, and salt. Blend until super smooth and creamy, about 1-2 minutes, scraping down sides as needed. (5 minutes)
  4. Taste and adjust sweetness or lime juice as desired. Add more coconut milk if the mixture is too thick. (2 minutes)
  5. Serve immediately in pineapple shells for soft-serve texture, or transfer to a freezer-safe container and freeze for 2-3 hours, stirring every 30 minutes for a firmer sorbet.

Notes

Use full-fat coconut milk for creamy texture. Do not overfreeze to avoid rock-hard sorbet; thaw 10-15 minutes before serving if frozen solid. Stir sorbet every 30 minutes during freezing to prevent ice crystals. Frozen mango chunks can be used but thaw slightly before blending. For vegan option, use maple syrup instead of honey. Toasted coconut flakes make a great garnish.
