  • 1/2 cup (120 ml) pumpkin puree (fresh or canned, preferably unsweetened)
  • 2 tablespoons maple syrup (adjust for sweetness)

  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg
  • 1 cup (240 ml) oat milk (recommend Oatly Barista Edition for best frothing)
  • 1/2 cup (120 ml) oat milk (chilled) for cold foam
  • 1 teaspoon vanilla extract (optional)
  • 1 teaspoon maple syrup or sweetener of choice (optional)
  • Ice cubes (as needed for serving)
  • Ground cinnamon or pumpkin pie spice for garnish

Instructions

  1. Brew 2 cups (480 ml) of strong chai tea using loose black tea leaves combined with ground cinnamon, ginger, cloves, and nutmeg or a chai tea bag. Steep for 5-7 minutes, then remove tea leaves or bags and let cool slightly.
  2. In a mixing bowl, combine the brewed chai tea with 1/2 cup (120 ml) pumpkin puree. Stir in 2 tablespoons maple syrup and the spices: 1/2 teaspoon cinnamon, 1/4 teaspoon ginger, 1/8 teaspoon cloves, and 1/8 teaspoon nutmeg. Whisk until smooth and well blended. Adjust sweetness or spice as needed.
  3. Chill the pumpkin chai mixture in the refrigerator for at least 20 minutes until fully chilled.
  4. Prepare the cold foam by pouring 1/2 cup (120 ml) chilled oat milk into a frother or blender. Add 1 teaspoon vanilla extract and 1 teaspoon maple syrup if desired. Froth until light and airy, about 30-45 seconds, until foam doubles in volume and holds soft peaks.
  5. Fill a tall glass with ice cubes. Pour the chilled pumpkin chai mixture over the ice, filling about 3/4 of the glass.
  6. Slowly spoon or pour the cold oat milk foam on top to create a fluffy layer.
  7. Sprinkle a pinch of ground cinnamon or pumpkin pie spice on the foam for garnish. Serve immediately with a straw or spoon.

Notes

Use barista edition oat milk for best frothing results. Chill the pumpkin chai base and oat milk before assembling to prevent ice melting and dilution. Adjust maple syrup to balance sweetness. Freshly brewed chai tea improves flavor over pre-made mixes. Cold foam is best served fresh and dissipates after about 15 minutes. You can prepare the pumpkin chai base ahead and store in the fridge for up to 3 days.
