Instructions

  1. Melt the butter in a medium skillet over medium heat until foamy but not browned, about 1-2 minutes.
  2. Add the minced garlic and stir frequently for about 1 minute until fragrant, being careful not to brown or burn it.
  3. Sprinkle the flour over the garlic and butter. Stir constantly with a wooden spoon or spatula to form a smooth roux, cooking for 1-2 minutes until paste-like but not clumpy.
  4. Slowly whisk in the milk while stirring continuously to prevent lumps. Simmer gently for 3-4 minutes until the mixture thickens.
  5. Gradually stir in the grated Parmesan cheese until melted and the sauce is smooth. Add more milk if the sauce is too thick.
  6. Season with salt, freshly ground black pepper, and Italian seasoning if using. Simmer for another minute to meld flavors.
  7. Remove from heat and garnish with chopped fresh parsley if desired. Serve generously over your cooked protein.
