  • ⅓ cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 2 to 3 tablespoons everything bagel seasoning (plus extra for garnish)
  • ½ teaspoon salt
  • ¼ teaspoon freshly cracked black pepper
  • 1 tablespoon finely chopped fresh chives (optional)

Instructions

  1. Place 12 large eggs in a single layer in a large pot; cover with cold water by about an inch (approximately 3 cups or 700 ml). Bring to a rolling boil over medium-high heat, then cover and remove from heat. Let eggs sit for 12 minutes.
  2. Drain hot water and immediately transfer eggs to a bowl filled with ice water. Let cool for at least 5 minutes to stop cooking and make peeling easier.
  3. Gently tap each egg on the counter to crack, then peel under running water to remove shells cleanly. Pat dry with a paper towel.
  4. Slice eggs lengthwise with a sharp knife. Carefully scoop out yolks into a mixing bowl, placing whites on a serving platter.
  5. Use a fork or potato masher to crumble yolks until smooth with no lumps.
  6. Add mayonnaise, sour cream, Dijon mustard, apple cider vinegar, salt, and black pepper to the yolks. Whisk until creamy and well combined. Stir in 2 tablespoons of everything bagel seasoning and chopped chives if using.
  7. Transfer filling to a piping bag or a zip-top bag with a corner snipped. Pipe the yolk mixture into the egg white halves, creating a smooth swirl or generous dollop.
  8. Sprinkle additional everything bagel seasoning evenly over the filled eggs for garnish.
  9. Refrigerate for at least 30 minutes before serving to let flavors meld and filling set.

Notes

If the filling is too thick, add a teaspoon of milk or water at a time to loosen it. Use a piping bag for neat presentation or a spoon if unavailable. Eggs peel easier if refrigerated for a week before boiling. Prepare and fill eggs up to 24 hours ahead; add seasoning garnish just before serving.
