  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces cream cheese, softened
  • 1 packet (about 1 ounce) ranch seasoning mix
  • 1 cup shredded cheddar cheese (about 4 ounces)
  • 6 slices bacon, cooked crisp and crumbled
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: fresh chives or parsley, chopped for garnish

Instructions

  1. Cook bacon slices in a skillet over medium heat until crisp, about 6-8 minutes. Drain on paper towels and crumble once cooled.
  2. In a mixing bowl, combine softened cream cheese, ranch seasoning, garlic powder, onion powder, salt, and pepper. Stir well until smooth and creamy.
  3. Place chicken breasts at the bottom of the slow cooker. Spread the cream cheese mixture evenly over the chicken.
  4. Cover and cook on low for 4 hours (or on high for 2-3 hours) until chicken reaches an internal temperature of 165°F and is tender enough to shred.
  5. Remove chicken breasts and shred with two forks either in the crockpot or on a cutting board. Return shredded chicken to the sauce and stir to combine.
  6. Sprinkle shredded cheddar cheese and crumbled bacon over the top. Cover again and cook for 10 minutes to melt the cheese.
  7. Garnish with fresh chives or parsley if desired. Serve hot.

Notes

Use room temperature cream cheese to avoid lumps. Do not overcook chicken to prevent dryness. Cook bacon separately for best texture. If sauce is too thick after shredding, add a splash of chicken broth or milk to loosen. Keep an eye on cheese melting stage to avoid dry or rubbery cheese.
