A quick and easy homemade frozen yogurt bark featuring creamy Greek yogurt mixed with crushed chocolate sandwich cookies, honey, and vanilla. Perfect for a refreshing, guilt-free dessert or snack.

  • 2 tablespoons honey
  • 1 teaspoon pure vanilla extract
  • 10 to 12 chocolate sandwich cookies, crushed (e.g., Oreo)
  • Optional: pinch of salt
  • Optional: mini chocolate chips

Instructions

  1. Line a rimmed baking sheet (about 9 x 13 inches) with parchment paper or a silicone baking mat.
  2. In a medium bowl, stir together Greek yogurt, honey, and vanilla extract until smooth and creamy.
  3. Place chocolate sandwich cookies in a sealed plastic bag and gently crush them using a rolling pin or heavy pan, aiming for a mix of small chunks and finer crumbs.
  4. Fold about two-thirds of the crushed cookies into the yogurt mixture.
  5. Pour the yogurt-cookie mixture onto the prepared baking sheet and spread evenly to about 1/4-inch thickness.
  6. Sprinkle the remaining crushed cookies evenly over the top, pressing down gently to adhere.
  7. Freeze the baking sheet for at least 4 hours or until the bark is completely frozen and firm.
  8. Remove from freezer, peel off the parchment paper, and break into irregular pieces. Serve immediately or store in an airtight container in the freezer.

Notes

Let the yogurt mixture sit at room temperature for 5 minutes if too thick to spread. Press cookie pieces gently on top for added crunch and appearance. Use Greek yogurt for best texture and scoopability. Crushing cookies to a mix of chunk sizes enhances texture. Freeze for at least 4 hours but not more than 6 hours to avoid overly hard bark. Store in an airtight container in the freezer for up to 2 weeks.
