A cozy fall treat combining the classic tangy snickerdoodle with moist pumpkin for a soft, tender cookie with a crisp cinnamon sugar crust.

  • ½ cup (115 g) unsalted butter, softened
  • ½ cup (120 g) pumpkin puree (not pumpkin pie filling)

  • 1 teaspoon vanilla extract
  • 2 teaspoons cream of tartar
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon, plus extra for rolling
  • ½ teaspoon salt
  • ⅓ cup (65 g) granulated sugar (for cinnamon sugar crust)
  • 2 teaspoons ground cinnamon (for cinnamon sugar crust)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat ½ cup softened unsalted butter with 1 cup granulated sugar until light and fluffy, about 3-4 minutes.
  3. Mix in ½ cup pumpkin puree, 1 large egg, and 1 teaspoon vanilla extract until fully combined.
  4. In another bowl, whisk together 2 ¾ cups all-purpose flour, 2 teaspoons cream of tartar, ½ teaspoon baking soda, 1 teaspoon ground cinnamon, and ½ teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing slowly until just combined. Do not overmix.
  6. In a small bowl, stir together ⅓ cup granulated sugar and 2 teaspoons ground cinnamon for the coating.
  7. Using a cookie scoop or tablespoon, scoop dough balls (about 2 tablespoons / 30 g each). Roll each ball generously in the cinnamon sugar mixture and place them about 2 inches apart on the baking sheets.
  8. Bake for 12 to 14 minutes, until edges are firm but centers still look soft.
  9. Let cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use firm pumpkin puree, not pumpkin pie filling, to avoid soggy dough. Cream butter and sugar well for tender cookies. Roll dough balls generously in cinnamon sugar for the signature crust. Watch baking time carefully to avoid dry cookies. Parchment paper prevents sticking and uneven browning. Room temperature ingredients mix more evenly.
