  • 2 tbsp granulated sugar
  • 1 large egg yolk, room temperature
  • ½ tsp vanilla extract
  • ¼ cup all-purpose flour (30 g) for streusel
  • ¼ cup packed brown sugar (50 g) for streusel
  • 3 tbsp unsalted butter (43 g), cold and cubed
  • ½ tsp ground cinnamon for streusel

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease.
  2. Make the brown sugar streusel: In a small bowl, combine ¼ cup flour, ¼ cup packed brown sugar, and ½ tsp cinnamon. Cut in cold cubed butter until mixture resembles coarse crumbs. Chill in fridge.
  3. Mix dry ingredients for muffins: whisk together 2 cups flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. Whisk wet ingredients: combine pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, vanilla extract, and milk until smooth.
  5. Fold dry ingredients into wet ingredients gently with a rubber spatula until just combined; some lumps are okay.
  6. Prepare cream cheese swirl: beat softened cream cheese with sugar, egg yolk, and vanilla extract until smooth.
  7. Assemble muffins: spoon about 2 tablespoons pumpkin batter into each cup, add about 1 tablespoon cream cheese mixture, repeat layering, then gently swirl with a toothpick to create marbled effect.
  8. Sprinkle a generous pinch of cold streusel topping over each muffin.
  9. Bake for 20-25 minutes until a toothpick inserted near center comes out clean.
  10. Cool muffins in pan for 10 minutes, then transfer to wire rack to cool completely.

Notes

Do not overmix the batter to avoid tough muffins. Use softened cream cheese for smooth swirl. Keep streusel cold before topping muffins. Oven temperatures vary; adjust if muffins brown too fast. Batter can be prepared the night before and baked fresh with streusel added before baking.
