  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) packed brown sugar
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 cup (245g) pure pumpkin puree
  • 1 tsp vanilla extract
  • 1 cup (175g) semi-sweet chocolate chips
  • For streusel topping:
  • 1/2 cup (60g) all-purpose flour
  • 1/3 cup (65g) packed brown sugar
  • 1/2 tsp ground cinnamon
  • 4 tbsp (56g) cold unsalted butter, cut into small cubes
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with liners or grease lightly.
  2. Make the streusel topping: In a small bowl, combine 1/2 cup flour, 1/3 cup brown sugar, 1/2 tsp cinnamon, and a pinch of salt. Add cold butter cubes and work into coarse crumbs using a pastry cutter or fingertips. Chill in fridge.
  3. Mix dry ingredients for muffins: In a large bowl, whisk together 2 cups flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Combine wet ingredients: In a separate bowl, whisk granulated sugar, brown sugar, vegetable oil, eggs, pumpkin puree, and vanilla extract until smooth.
  5. Pour wet ingredients into dry and gently fold with a spatula until just combined; a few lumps are okay. Do not overmix.
  6. Fold in chocolate chips carefully.
  7. Divide batter evenly among 12 muffin cups, filling each about 2/3 full.
  8. Sprinkle streusel topping generously over each muffin.
  9. Bake for 20–25 minutes until a toothpick inserted comes out clean or with a few moist crumbs and streusel is golden brown.
  10. Cool muffins in pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Keep butter cold for streusel to maintain crumbly texture. Do not overmix batter to keep muffins tender. Use room temperature eggs for better rise. Muffins freeze well; reheat in microwave or oven. Tent with foil if streusel browns too quickly.
