  • For the Cinnamon Streusel Topping:
  • ⅓ cup (40g) all-purpose flour
  • ⅓ cup (65g) brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 3 tablespoons (43g) unsalted butter, cold and cubed

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. Grate 1 ½ cups zucchini using a box grater or food processor. Squeeze out excess moisture using a clean kitchen towel or paper towels.
  3. In a large mixing bowl, whisk together 1 ¾ cups flour, 1 teaspoon baking powder, ½ teaspoon baking soda, ½ teaspoon salt, and 1 teaspoon cinnamon.
  4. Add 2 large eggs, ⅓ cup vegetable oil, ¾ cup granulated sugar, and 1 teaspoon vanilla extract to the dry ingredients. Mix until just combined; do not overmix.
  5. Gently fold in the grated zucchini and 1 cup chocolate chips until evenly distributed.
  6. In a small bowl, combine ⅓ cup flour, ⅓ cup brown sugar, and 1 teaspoon cinnamon. Cut in 3 tablespoons cold butter with a pastry cutter or fingers until mixture resembles coarse crumbs.
  7. Spoon batter evenly into the prepared muffin tin, filling each cup about ¾ full.
  8. Sprinkle the cinnamon streusel topping evenly over each muffin cup, pressing lightly to adhere.
  9. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean and the streusel is golden brown. Check after 18 minutes to avoid overbaking.
  10. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
