A warm and flavorful pumpkin spice syrup made with real pumpkin puree and aromatic spices, perfect for adding a cozy touch to your morning coffee or seasonal treats.

Ingredients

Scale
  • 1 cup (200 g) packed light brown sugar
  • 1 cup (240 ml) water
  • ¼ cup (about 60 g) pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a small saucepan, combine 1 cup brown sugar and 1 cup water. Heat over medium, stirring frequently until the sugar fully dissolves, about 5 minutes, to create a clear syrup base.
  2. Whisk in ¼ cup pumpkin puree, 1 teaspoon cinnamon, ½ teaspoon nutmeg, and ¼ teaspoon cloves until smoothly blended. The mixture will thicken slightly.
  3. Lower heat to medium-low and simmer uncovered for about 10 minutes, stirring occasionally to prevent sticking or burning.
  4. Remove from heat and stir in 1 teaspoon vanilla extract and a pinch of salt to balance the flavors.
  5. Optional: Pour the syrup through a fine mesh strainer into a clean jar or bottle to remove pumpkin bits, pressing gently to extract extra liquid.
  6. Let the syrup cool to room temperature before sealing. Store in the refrigerator for up to 2 weeks. Stir before using as it thickens when chilled.

Notes

Use light brown sugar for balanced sweetness. For a smoother syrup, strain out pumpkin bits. Warm syrup gently with a splash of water if it thickens too much in the fridge. Avoid high heat to prevent burning. Fresh spices improve flavor. Variations include using coconut sugar or maple syrup for refined sugar-free options, adding ginger or cardamom for extra spice, or reducing sugar for less sweetness.
