Ingredients

Scale
  • 2 cups (250g) all-purpose flour, sifted
  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened (room temperature)
  • 1 cup (240ml) whole milk (or dairy-free milk like oat)
  • 2 large eggs, room temperature
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3/4 cup (150g) brown sugar, packed (dark brown sugar preferred)
  • 1/2 cup (70g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (100g) chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan with butter or line with parchment paper.
  2. Make the streusel topping: In a medium bowl, combine brown sugar, flour, cinnamon, and salt. Pour in melted butter and stir until crumbly but moist. Fold in chopped pecans. Set aside.
  3. In a large bowl, cream together softened butter and granulated sugar until fluffy and light in color, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, salt, and cinnamon.
  6. Gradually add dry ingredients to the butter mixture, alternating with milk, beginning and ending with dry ingredients. Mix gently until just combined.
  7. Pour batter into prepared pan and smooth the top.
  8. Sprinkle streusel topping evenly over the batter without pressing down.
  9. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil if topping browns too quickly.
  10. Remove from oven and let cool in pan on a wire rack for at least 20 minutes before slicing.

Notes

Use softened butter for best creaming results. Do not overmix batter after adding dry ingredients to avoid toughness. Fresh baking powder ensures good rise. For extra crunchy streusel, broil for 1-2 minutes at the end, watching carefully. Nut-free option: omit nuts or replace with toasted coconut flakes. Dairy-free option: use plant-based milk and butter alternatives.
