  • 46 bone-in, skin-on chicken thighs (about 2 pounds or 900 grams)
  • 1/3 cup (65 grams) brown sugar (light or dark)
  • 45 large cloves garlic, minced fresh
  • 2 tablespoons olive oil (extra virgin recommended)
  • 1/4 cup (60 ml) soy sauce
  • 1 tablespoon (15 ml) apple cider vinegar
  • 1/2 cup (120 ml) chicken broth
  • 1 1/2 pounds (700 grams) baby Yukon Gold or red potatoes, halved or quartered
  • Salt and black pepper to taste
  • Fresh parsley or thyme, chopped (optional, for garnish)

Instructions

  1. Wash and halve the baby Yukon Gold potatoes. Toss them in 1 tablespoon of olive oil, salt, and pepper. Set aside.
  2. In a mixing bowl, combine the brown sugar, minced garlic, soy sauce, apple cider vinegar, chicken broth, and remaining 1 tablespoon olive oil. Whisk until the sugar dissolves and everything is well mixed.
  3. Optional: Heat a skillet over medium-high heat and brown the chicken thighs skin-side down for about 3-4 minutes until golden. Flip and cook another 2 minutes.
  4. Place the prepared potatoes at the bottom of the crockpot. Lay the chicken thighs on top, skin side up.
  5. Pour the brown sugar garlic sauce evenly over the chicken and potatoes.
  6. Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until chicken reaches 165°F (74°C) and potatoes are fork-tender.
  7. About 15 minutes before serving, uncover the crockpot to let the sauce thicken slightly. For crispier skin, transfer chicken thighs to a baking sheet and broil for 3-5 minutes, watching carefully.
  8. Sprinkle chopped fresh parsley or thyme over the dish before serving.

Notes

Browning the chicken before slow cooking adds extra flavor and helps keep the skin from getting soggy but is optional. Use tamari or gluten-free soy sauce to make this recipe gluten-free. Potatoes can be substituted with sweet potatoes or carrots. To get crispy skin, broil the chicken after slow cooking for 3-5 minutes. Assemble the recipe the night before and refrigerate to save time, adding 30 minutes to cooking time.
