A simple and nostalgic campfire dessert featuring ripe bananas stuffed with Nutella and mini marshmallows, wrapped in foil and roasted to gooey perfection. Perfect for outdoor campfires or indoor broilers.

  • 2 ripe but firm bananas (yellow with a few brown spots)
  • 4 tablespoons Nutella (or any chocolate hazelnut spread)
  • 4 tablespoons mini marshmallows
  • Aluminum foil for wrapping
  • Optional: chopped nuts (pecans or walnuts), cinnamon, chili powder, chocolate chips, white chocolate chunks

Instructions

  1. Slice each banana lengthwise through the peel but not all the way through the fruit to create a pocket.
  2. Open the banana pocket gently and spoon about 2 tablespoons of Nutella inside.
  3. Sprinkle 2 tablespoons of mini marshmallows over the Nutella. Add optional nuts or spices if desired.
  4. Wrap each stuffed banana tightly in aluminum foil, sealing the edges well.
  5. Place the foil packets on hot embers or a grill grate over medium heat.
  6. Cook for 10-12 minutes, turning occasionally with tongs to heat evenly. Avoid direct flames.
  7. Carefully unwrap the foil (watch for steam) and check that the banana is soft but intact, Nutella melted, and marshmallows toasted.
  8. Serve immediately with a spoon or eat right from the peel.

Notes

Use ripe but firm bananas to prevent mushiness. Cook over embers or medium heat to avoid burning. Mini marshmallows melt more evenly than large ones. You can prepare and wrap banana boats ahead and refrigerate until ready to cook. Avoid microwaving leftovers to prevent mushy texture.
