Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish with butter.
  2. In a large bowl, toss the sliced peaches with brown sugar, cornstarch, cinnamon, vanilla extract, lemon juice, and a pinch of salt until evenly coated.
  3. Pour the peach mixture into the prepared baking dish, spreading evenly.
  4. In a medium bowl, whisk together flour, granulated sugar, baking powder, and salt.
  5. Add cold, cubed butter to the flour mixture and cut in with a pastry cutter or fingertips until mixture resembles coarse crumbs.
  6. In a small bowl, whisk together milk and egg, then pour into the flour mixture and stir gently with a fork until just combined.
  7. Drop dollops of biscuit dough over the peach filling, covering as much surface as possible but leaving some gaps.
  8. Bake for 35-40 minutes until the biscuit topping is golden brown and the peach filling is bubbling.
  9. Let the cobbler cool for 10-15 minutes before serving to allow the filling to thicken.
