Instructions

  1. Brown the butter: Place 1 cup (227 g) unsalted butter in a medium saucepan over medium heat. Stir constantly as it melts, then starts foaming. After about 5-7 minutes, the butter will turn golden brown with little brown specks and smell nutty. Remove from heat immediately to avoid burning. Transfer to a heatproof bowl and let cool for 10 minutes.
  2. Mix sugars and butter: In a large bowl, combine the browned butter with 3/4 cup (150 g) granulated sugar and 3/4 cup (165 g) packed brown sugar. Use a hand mixer or whisk to combine until smooth and slightly glossy, about 1-2 minutes.
  3. Add eggs and vanilla: Crack in 2 large eggs (room temperature) one at a time, mixing well after each addition. Stir in 2 teaspoons vanilla extract. The mixture should look creamy and well combined.
  4. Combine dry ingredients: In a separate bowl, whisk together 2 1/4 cups (288 g) all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Incorporate dry into wet: Gradually add the dry ingredients to the wet, mixing on low speed or folding gently with a spatula. Stop as soon as the flour disappears to avoid overmixing.
  6. Add chocolate chips: Fold in 1 1/2 cups (270 g) semi-sweet chocolate chips evenly throughout the dough.
  7. Chill the dough (optional but recommended): Chill the dough for at least 30 minutes to firm up and prevent spreading during baking.
  8. Preheat oven and prepare baking sheets: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  9. Scoop the dough: Use a cookie scoop or tablespoon to drop dough balls about 2 inches apart on the baking sheets. Optionally sprinkle flaky sea salt on top.
  10. Bake: Bake for 10-12 minutes until edges are golden and centers look slightly soft but set.
