Instructions

  1. Prep your ingredients and equipment: measure flour, baking powder, baking soda, and salt. Cube the cold butter and chill all ingredients in the fridge for 5 minutes.
  2. Mix the dry ingredients: whisk together flour, baking powder, baking soda, and salt in a large mixing bowl until evenly combined.
  3. Cut in the cold butter: add cubed butter to the flour mixture and use a pastry cutter or two forks to cut the butter until the mixture resembles coarse crumbs with pea-sized bits.
  4. Add the buttermilk: pour in cold buttermilk all at once and stir gently until just combined. Dough should be slightly sticky but hold together; add more buttermilk if too dry.
  5. Fold and roll the dough: turn dough onto a lightly floured surface, pat into a rough rectangle about ¾ inch thick, fold into thirds like a letter, then roll out again to the same thickness. Repeat 2–3 times.
  6. Cut the biscuits: use a 2 ½ inch biscuit cutter to press straight down without twisting. Gather scraps gently, reshape, and cut more biscuits until dough is used.
  7. Bake: place biscuits close together on a parchment-lined baking sheet and bake at 425°F (220°C) for 12–15 minutes until golden brown and puffed.
