  • 1 lb flank steak or skirt steak
  • 2 tbsp olive oil (extra virgin preferred)
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lime
  • 1 cup fresh parsley, finely chopped
  • 1/2 cup fresh cilantro, finely chopped (optional)
  • 3 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/2 tsp crushed red pepper flakes
  • Salt and pepper to taste
  • 2 cups cooked brown rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced (optional)
  • 1 avocado, sliced
  • Fresh lime wedges

Instructions

  1. In a medium bowl, combine olive oil, minced garlic, smoked paprika, cumin, lime juice, salt, and black pepper. Toss the flank steak in and coat evenly. Cover and marinate for at least 20 minutes, up to 2 hours.
  2. While the steak marinates, finely chop parsley and cilantro. In a separate bowl, whisk together red wine vinegar, olive oil, minced garlic, red pepper flakes, salt, and pepper. Stir in chopped herbs. Adjust seasoning and set aside at room temperature.
  3. Cook rice or quinoa according to package instructions. Fluff with a fork and keep warm.
  4. Heat a cast iron skillet over medium-high heat until very hot (3-5 minutes). Add oil if needed. Sear steak for 3-4 minutes per side for medium-rare or longer for desired doneness. Remove and let rest for 5 minutes.
  5. Slice steak thinly against the grain.
  6. Assemble bowl with a scoop of rice or quinoa, sliced steak, chimichurri, cherry tomatoes, red onion slices, and avocado. Finish with a squeeze of fresh lime juice.
  7. Toss gently or leave layered for presentation. Serve immediately.

Notes

Let the steak rest after cooking to keep it juicy. Finely chop herbs by hand for best chimichurri texture. Marinate steak for at least 20 minutes for flavor. Adjust red pepper flakes to taste for heat. Store components separately for leftovers.
