  • 4 cloves roasted garlic, mashed
  • 2 tablespoons soy sauce (low-sodium optional)
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground white pepper
  • 2 green onions, finely chopped
  • 1 tablespoon grated fresh ginger
  • 3035 store-bought dumpling wrappers (about 3 inches diameter)
  • Additional flour or cornstarch for dusting
  • 1 cup chicken broth or stock
  • 1 tablespoon soy sauce (for cooking liquid)
  • 1 teaspoon rice vinegar

Instructions

  1. Roast garlic by wrapping a head in foil and baking at 400Β°F for 30-40 minutes until soft and golden. Let cool and mash cloves.
  2. In a large bowl, combine ground pork, mashed roasted garlic, soy sauce, oyster sauce, sesame oil, white pepper, green onions, and grated ginger. Mix until well combined and sticky.
  3. Lay out dumpling wrappers on a floured surface and keep covered with a damp towel.
  4. Place about 1 tablespoon of filling in the center of each wrapper. Moisten edges with water, fold in half, and pinch edges to seal tightly.
  5. Pour chicken broth, soy sauce, and rice vinegar into the slow cooker and stir gently.
  6. Arrange dumplings upright and slightly apart in the slow cooker. Cook in batches if needed.
  7. Cover and cook on low for 4-5 hours or on high for 2-3 hours until pork is fully cooked and dumplings are tender.
  8. Carefully remove dumplings with a slotted spoon and serve warm with soy sauce or preferred dipping sauce.

Notes

Use slightly fatty pork for juiciness. Avoid overfilling wrappers to prevent leaks. Arrange dumplings with space to avoid sticking or use a steaming rack. Optional pre-sear dumplings for texture contrast. Cooking liquid can be saved as broth. For gluten-free, use tamari and gluten-free wrappers.
