  • 1 cup wild rice blend, cooked according to package instructions
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 yellow onion, finely chopped
  • 2 celery stalks, chopped
  • 2 carrots, diced
  • 2 garlic cloves, minced
  • 8 ounces cremini mushrooms, sliced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh sage, chopped
  • 1 cup chicken or vegetable broth
  • 1/2 cup pecans, chopped and toasted
  • Salt and pepper to taste

Instructions

  1. Cook the wild rice blend according to the package instructions, about 40-50 minutes. Fluff with a fork and set aside.
  2. Preheat oven to 375°F (190°C).
  3. Heat butter and olive oil in a large skillet over medium heat.
  4. Add onion, celery, and carrots to the skillet. Sauté for 5-7 minutes until softened and fragrant.
  5. Stir in garlic and mushrooms. Cook for an additional 5 minutes until mushrooms are tender and have released their juices.
  6. Add fresh rosemary, thyme, and sage to the skillet. Cook for 1-2 minutes, stirring frequently, to release their flavors.
  7. In a large mixing bowl, combine cooked wild rice, sautéed vegetables, pecans, and chicken or vegetable broth. Season with salt and pepper to taste.
  8. Transfer the mixture to a greased 9×13-inch baking dish and spread evenly.
  9. Cover the dish with foil and bake for 20 minutes. Remove foil and bake uncovered for an additional 10 minutes to slightly crisp the top.
  10. Remove from oven and let cool for 5 minutes before serving.
