Instructions

  1. Prep the turkey: If using leftover turkey, shred or chop it into small pieces. If starting with fresh turkey meat, cook it thoroughly and let it cool before shredding.
  2. Cook the aromatics: Heat a skillet over medium heat and add a small pat of butter. SautΓ© the minced shallots and garlic until soft and fragrant, about 3-4 minutes.
  3. Add the turkey: Stir the shredded turkey into the skillet with the shallots and garlic. Add the chicken broth, thyme, and bay leaf. Simmer gently for 10 minutes, stirring occasionally, until the turkey absorbs the flavors.
  4. Blend the rillettes: Remove the bay leaf and transfer the turkey mixture to a food processor. Add the softened butter and Dijon mustard. Pulse until the mixture is smooth but still has a slight texture. Taste and adjust seasoning with salt and pepper.
  5. Fold in the cornichons: Transfer the rillettes to a mixing bowl and gently fold in the chopped cornichons.
