Instructions

  1. Brown the butter: Place 6 tablespoons (85g) of unsalted butter in a small saucepan over medium heat. Stir constantly until it foams and small brown specks form. Remove from heat once nutty and golden brown. Let cool slightly.
  2. Prepare the yeast: Warm 1 cup (240ml) of milk to about 110°F (43°C). Pour into a large mixing bowl, sprinkle 2 ¼ teaspoons of active dry yeast and 2 tablespoons sugar over the top. Stir gently and let sit until foamy, about 5 minutes.
  3. Mix the dough: Add 2 large eggs, the cooled browned butter, 1 teaspoon salt, and 4 cups (480g) flour to the yeast mixture. Mix with a stand mixer dough hook on low speed until combined, then medium speed for 6-8 minutes, or knead by hand for 10 minutes until smooth and elastic.
  4. First rise: Lightly grease a large bowl. Place dough inside, cover, and let rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  5. Shape rolls: Punch down dough, turn onto floured surface, divide into 12 equal pieces (~2 ounces each). Shape each into a smooth ball and place in a greased 9-inch round cake pan or baking sheet, spaced apart.
