  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons brown sugar
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon salt (or to taste)
  • 1 tablespoon olive oil
  • Optional: ½ teaspoon chili flakes

Instructions

  1. Pat the pork tenderloin dry with paper towels and trim any silver skin or excess fat.
  2. In a small bowl, mix salt, black pepper, smoked paprika, garlic powder, and onion powder. Rub the spice mix all over the tenderloin.
  3. Heat olive oil in a cast-iron skillet over medium-high heat. Sear the tenderloin on all sides until golden brown, about 2 minutes per side.
  4. Lay bacon slices on a cutting board, slightly overlapping. Place the seared tenderloin at one end and roll it up tightly with the bacon. Tie securely with kitchen twine in 3-4 spots.
  5. In a small bowl, combine BBQ sauce, brown sugar, and optional chili flakes. Mix well.
  6. Brush the glaze evenly over the bacon-wrapped tenderloin, reserving some for basting later.
  7. Preheat oven to 400°F (200°C). Place the tenderloin in the skillet or a roasting pan and roast for 20-25 minutes, basting every 10 minutes with remaining glaze. Use a meat thermometer to check for an internal temperature of 145°F (63°C).
  8. Remove from oven and tent loosely with foil. Let rest for 10 minutes before slicing into ½-inch medallions.
  9. Serve with any remaining glaze on the side.
