A light, easy-to-make watermelon mint mojito with fresh lime soda that is perfect for summer. This refreshing drink combines juicy watermelon, fragrant mint, and sparkling lime soda for a crisp, sweet, and tangy beverage.

Ingredients

Scale
  • 2 cups (300 grams) fresh, ripe, seedless watermelon chunks
  • 1012 fresh mint leaves, gently bruised
  • 1 large lime, juiced (about 2 tablespoons or 30 ml), plus extra wedges for garnish
  • 1 cup (240 ml) fresh lime soda (store-bought or homemade by mixing soda water with fresh lime juice and sweetener)
  • 1.5 oz (45 ml) white rum (optional)
  • 1 tablespoon (15 ml) simple syrup (optional, adjust based on watermelon sweetness)
  • Ice cubes

Instructions

  1. Prepare Ingredients (5 minutes): Chop watermelon into bite-sized chunks (about 2 cups or 300 grams). Rinse mint leaves and pat dry. Juice 1 large lime to get about 2 tablespoons (30 ml). Slice a few lime wedges for garnish.
  2. Muddle Watermelon and Mint (3 minutes): In a sturdy glass or mixing cup, add the watermelon chunks and mint leaves. Using a muddler or the back of a spoon, gently press down to crush the watermelon and release its juice while bruising the mint leaves to wake up their oils. Avoid over-muddling the mint to prevent bitterness.
  3. Add Lime Juice and Sweetener (1 minute): Pour in the freshly squeezed lime juice. If your watermelon isn’t very sweet, add 1 tablespoon (15 ml) of simple syrup. Stir gently to combine.
  4. Mix with Ice and Soda (2 minutes): Fill the glass with ice cubes, then slowly top with 1 cup (240 ml) of fresh lime soda. If using rum, pour 1.5 oz (45 ml) over the ice before the soda. Stir gently to combine all flavors without losing the fizz.
  5. Garnish and Serve: Add a sprig of fresh mint and a wedge of lime on the rim. Serve immediately for the best fizz and freshness.

Notes

Use ripe watermelon for best sweetness. Avoid over-muddling mint to prevent bitterness. Fresh lime juice is key for brightness. Chill your glass before serving. Add soda last and stir gently to keep fizz. Adjust sweetness based on watermelon sweetness. For a smoother drink, strain the muddled mixture before adding ice and soda. For a bigger batch, multiply ingredients and muddle in a large pitcher, adding soda last.
