A quick and easy frozen rosé cocktail blended with frozen strawberries, lemon juice, and simple syrup, perfect for summer gatherings and solo refreshment.

  • 1 bottle (750 ml) rosé wine, chilled and frozen in advance
  • 2 cups (about 300 grams) frozen strawberries, unsweetened if possible
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons simple syrup (or honey/maple syrup to taste)
  • 1 cup ice cubes (optional)
  • Fresh strawberries, sliced (for garnish)
  • Mint leaves (optional garnish)

Instructions

  1. Freeze the rosé: Pour the entire bottle of rosé into a baking sheet or shallow pan and freeze for at least 6 hours or overnight until solid but slightly slushy on top.
  2. Prepare your ingredients: Measure out 2 cups of frozen strawberries and squeeze fresh lemon juice. Prepare simple syrup if making your own.
  3. Break up frozen rosé into chunks using a spoon or spatula.
  4. In a high-speed blender, combine rosé chunks, frozen strawberries, lemon juice, simple syrup, and ice cubes if using. Blend on low speed then high until smooth and slushy, about 45-60 seconds. Scrape down sides if needed.
  5. Taste and adjust sweetness or thickness by adding more simple syrup, honey, rosé, or water as needed.
  6. Optional: Strain the blend through a fine mesh strainer for a smoother texture without berry seeds.
  7. Serve immediately in chilled glasses, garnished with fresh strawberry slices and mint leaves.

Notes

Freeze rosé in a thin layer for easier blending. Use frozen strawberries for best icy texture. Adjust sweetness gradually. Blend just before serving to keep frosty texture. Leftovers can be frozen and re-blended before serving.
