A quick and easy homemade summer drink featuring fresh strawberries and lemon juice blended into a refreshing icy slushie. Perfect for cooling off on hot days with a natural, bright flavor.

Ingredients

  • 2 cups (300 g) fresh strawberries, hulled and halved (or frozen, no need to thaw)
  • 1/2 cup (120 ml) freshly squeezed lemon juice (about 23 lemons)
  • 1/3 cup (80 ml) simple syrup (made from equal parts sugar and water)
  • 1/2 cup (120 ml) cold water
  • 2 cups (about 300 g) crushed or whole ice cubes
  • Optional: fresh mint leaves for garnish

Instructions

  1. Make the simple syrup by combining 1/3 cup sugar and 1/3 cup water in a small saucepan. Heat gently, stirring until sugar dissolves completely. Set aside to cool.
  2. Hull and halve about 2 cups of fresh strawberries. If using frozen, no need to thaw.
  3. Squeeze 2-3 lemons to yield 1/2 cup of fresh lemon juice. Strain to remove seeds and pulp.
  4. In a blender, combine strawberries, lemon juice, simple syrup, and cold water. Blend on medium speed for 30-45 seconds until smooth and vibrant.
  5. Add 2 cups of ice cubes or crushed ice to the blender. Pulse in short bursts until the ice breaks down into a slushie consistency, about 20-30 seconds.
  6. Taste the slushie and adjust sweetness by adding more simple syrup or a pinch of sugar if too tart. Add a splash of cold water if too thick and blend briefly.
  7. Serve immediately in chilled tall glasses. Garnish with fresh mint leaves or a lemon wheel if desired.

Notes

Avoid over-blending after adding ice to prevent a watery texture. Use fresh lemon juice for best flavor. Crushed ice blends faster and yields a smoother slush. Chilling glasses keeps the drink colder longer. Simple syrup can be made ahead and stored in the fridge for weeks.
