  • 12 oz fresh snow peas, ends trimmed
  • 1 cup cherry tomatoes, halved
  • 1/4 cup pomegranate arils
  • 1/3 cup fresh dill sprigs (or parsley or thyme)
  • 1/4 cup sliced radishes (optional)
  • 1 small English cucumber, sliced into thin rounds (optional)
  • 8 oz feta cheese, crumbled
  • 1/2 cup plain full-fat Greek yogurt
  • 2 tbsp extra virgin olive oil (plus more for drizzling)
  • 1 small garlic clove, minced
  • 1 tsp lemon zest (about 1 small lemon)
  • 1–2 tbsp fresh lemon juice (to taste)
  • Black pepper, freshly ground, to taste
  • Pinch of crushed red pepper flakes (optional)
  • Extra herbs or edible flowers (optional, for garnish)
  • Drizzle of honey over the feta dip (optional)

Instructions

  1. Rinse snow peas under cool water and pat dry. Trim ends and remove strings if needed. Halve cherry tomatoes and slice radishes and cucumber if using. Set veggies aside on a clean towel.
  2. In a food processor or blender, combine crumbled feta, Greek yogurt, olive oil, minced garlic, and lemon zest. Pulse until smooth and fluffy, about 1-2 minutes, scraping down sides as needed.
  3. Add 1 tbsp lemon juice, black pepper, and red pepper flakes (if using). Blend again until creamy. Taste and adjust lemon juice or pepper as desired.
  4. Place a small bowl or ramekin in the center of a large round platter. Arrange snow peas in a circle around the bowl, overlapping slightly. Add cucumber rounds or radish slices for fullness if desired.
  5. Scatter halved cherry tomatoes and pomegranate arils over the snow peas. Tuck fresh dill sprigs and extra herbs around the wreath. Add edible flowers or lemon zest curls for extra color if desired.
  6. Spoon whipped feta dip into the center bowl. Drizzle with olive oil and sprinkle with black pepper or chopped herbs. Optionally, drizzle honey over the dip.
  7. Chill the wreath (without dip) for up to 1 hour before serving for crispness. Add dip just before serving.
  8. If snow peas dry out, lightly mist with water. If feta dip thickens, stir in a splash of lemon juice or yogurt. Fill any gaps in the wreath with extra herbs or cucumber rounds.

Notes

Use the freshest snow peas for best crunch. Pat all veggies dry before assembling to prevent sogginess. Prep veggies and dip ahead, then assemble just before serving. For vegan/dairy-free, use plant-based feta and yogurt. Customize with seasonal veggies or herbs. Serve chilled for best texture.
